Here a large wok of sauce, called "gulai" is being prepared for a gathering. Usually many women gather and cook for days before a ceremony or event. To prepare this type of dish, first a spice paste is made. Chili peppers, shallots, garlic, coriander, and a variety of other spices are ground into a paste. They are then sauted with oil. After a few minutes, fresh coconut milk is added. This then boils as more spices are added along with the meat. This continues to boil for hours until the flavor has been soaked in and the meat is tender and ready to eat. Yum!
